Rick is 100% aware that he's a cartoon, Roiland drops clear hints throughout the series, the most glaring of which being the interdimensional cable/morty's mind blowers episodes where he directly references the fact that it's a sequel and, in morty's mind blowers, straight up breaks the fourth wall and tells the audience that they're doing that instead of interdimensional cable
Them traveling through time is just a fan theory
